Apple strudels

We put the cleaned apples on the large grater. Season them with sugar, to taste, until soft and reduce all the juice left. At the end, add cinnamon. This time, I missed a lot, that's why they are so dark, but they are still good.

We put the flour in a bowl, and in the middle we make a hole in which we pour water, oil and vinegar. Mix with a wooden spoon and when the dough takes on consistency, start kneading by hand until all the ingredients are well incorporated. We form a ball of dough and slam it responsibly on the worktop. The more we repeat the operation, the more elastic and smooth the dough becomes.

Divide the dough into 4 and from each ball we spread a sheet as thin as possible, initially with the rolling pin, then with the back of the hands and at the end with the fingers we gently pull from the center to the edge. I'm not very good at this process, but they came out really thin.

Spread the filling on the first half of the sheet, roll and tighten at the ends.

Place the rolls in a tray lined with baking paper and put in the oven, preheated to 180 degrees until lightly browned.

Powder with sugar and portion when slightly warm.



Apple strudel is very good as a snack not only for dessert. For this cake recipe you will need about 1 kg of apples. For the filling, place the cinnamon over the grated apples and harden them with sugar to taste.

Knead a dough that must be elastic, cover and let it cool for an hour.

I prefer to make them at home, especially since they are very easy to make, do not require many ingredients and are delicious. I can even prepare them for my father because I can replace sugar with sweetener, so he can enjoy them even if he has diabetes. If the apples are very sweet, you can omit the sugar altogether.

For filling these mini apple strudels, we opted for two types of apples, red and yellow. You can put any apples you have in the house and you can even mix them with pears or quinces. They will have a special aroma and a very good taste. Also for a better taste, I put vanilla paste in the filling. Vanilla paste was made at home, from vanilla pods mixed with sugar syrup. You can also add vanilla sugar or even the seeds of a vanilla bean. I also added walnuts to the filling for taste and because it is a very successful combination.

Because I wanted to show you a quick version of these apple strudels, I chose to use fresh pie sheets, bought commercially. They are very good, they contain only flour, water and salt and you can use them in all kinds of dishes, both sweet and salty. Because I really like the combination, I also used cinnamon from Cosmin. Apples and cinnamon fit perfectly and in combination with walnuts are even tastier. I made the strudels from three layers of pie sheets greased with a little oil. I rolled them well and at the end I greased them again with oil to brown them nicely on top.

You can make mini strudels with apples and walnuts and enlarge them or you can even make a large one that you can portion and serve. They are as tasty as Apple pie and much easier to do. They are also to the children's taste and if necessary you can even omit the walnut.

I peeled the apples and shaved them with a small-mesh grater. I hardened them with sugar, vanilla sugar, lemon juice (prevents oxidation and keeps the beautiful color), 1 cinnamon stick and cinnamon powder, over medium heat until the liquid left by the apples evaporates.

I greased 4-6 sheets of pie with melted butter or oil during Lent. I put the hardened apples over the sheets and spread them evenly. I sprinkled a little semolina over them and covered with another row of four greased sheets, then I rolled.

I put the pie in the lined tray and then greased it with melted butter or oil.

I baked the apple strudel pie in the preheated oven at 180 ° C for 35-45 minutes or until browned.

When it was cooked, I took it out and let it cool. I cut the slices and powdered them with sugar.

  • 2 packets of puff pastry dough (2 x 275 g)
  • 6 apples (approx. 1 kg)
  • 100 g of sugar
  • 100 g raisins
  • 50 g butter
  • 1/2 teaspoon cinnamon

First we soak the raisins in warm water. We wash the washed apples in a large grater and heat them in butter, adding sugar, cinnamon and raisins.

Temper until all the liquid drops and let it cool (if we put the hot composition, the puff pastry will soften very much).

Divide the composition in two and spread it over the puff pastry and roll the sheets lightly, so as to obtain two rolls.

I cut them in half and obtained 4 pieces that I cut slightly on top. I baked them in the preheated oven at 200 ° C for 30-35 minutes until they were nicely browned.

After they cool, powder them with powdered sugar.
